I’m Spyros Tranakas, chef and owner of CARNAYO Restaurant – Bar & Catering. It’s an honor to share my culinary world with you. My roots are from this beautiful island of Paxos, I was born and raised in Germany, where I studied and started my professional experience – but my heart always longed for home.
Returning to this island’s olive groves and turquoise waters, I brought back not just techniques, but a mission: to elevate Greek and local Paxiot flavors and to create a fusion cuisine with modern creativity while staying true to my roots.
At CARNAYO, we marry the freshest local ingredients (many from our own garden or nearby fishermen and producers) with the precision I learned abroad. The result? A dining experience that I’m hoping will be a real delight for you.
